Chocolate Chip Oatmeal Brownies

So this was a very popular recipe at work. All the campers loved them (many of them tried -and failed- to get an extra one) and they're fairly easy to make.

Ingredients

  • 1 cup of margarine/butter
  • 1 cup of brown sugar
  • 1/2 cup of white sugar
  • 2 eggs
  • 2 teaspoons of vanilla (I usually added an extra teaspoon)
  • 1 teaspoon of baking powder
  • 1 1/2 cups of flour
  • 2 cups of rolled oats
  • chocolate chips (I found that 3 1/4 cups was a good amount, but it all depends on how much chocolate you like)


Beat the butter and sugars together until you have a good creamy mixture. Make sure that everything is well combined before moving on. Then you beat in the eggs, one at a time (it doesn't make much of a difference in the resulting brownie but I found that the batter was easier to mix if the eggs were done one at a time). Stir the vanilla in. Once you've done that, add in the dry ingredients. The finished batter should be closer to a cookie dough than a brownie mix in terms of texture. Pour the batter into a greased baking pan (otherwise you'll have some real fun trying to get it out once it's finished baking) and stick in the oven.
A good thing to remember with this recipe is that it'll harden upon cooling, so try to pull it out just a tad underdone. No one likes hard brownies.
This recipe is a fabulous dessert, but if you serve it with fruit it can double as a good breakfast.
